Description

 

Gruyère is a cheese made from raw cow’s milk, with a cooked pressed paste and a washed rind.
The rind, brown to orange in color, is rubbed, solid and grainy.

Its paste, ivory to pale yellow in color, is firm and has openings varying in size from that of a pea to that of a cherry.

In the mouth, it is a melting cheese with a soft, fruity and flowery taste.

Gruyère can also be presented in portioned or grated form.
